Beef Noodles

Famous Taiwanese Beef Noodles, they will have your mouth watering!

This dish is not difficult to make but it takes over 2 hours. Be patient, you will be surprised how good it tastes.



Step 1

Cook Beef

Make sure to wash the beef thoroughly. Once washed, prepare 2 tablespoons of cooking wine, chop one 1 onion and 4 pieces of ginger. In a large pot add all of the ingredients just mentioned and add water until the pot is about 3/4 full. Turn heat to high. Once the water begins to boil, turn heat down to low and skim off any scum. Once scum has been removed, add the spice pouch and cook for another 40 minutes.

Prepare Other Ingredients

We will be making two sauces today. For sauce A, we will need 2 tablespoons of fermented chili bean sauce and for sauce B we will need 1 tablespoon of soy sauce and cooking wine along with .5 tablespoons of vinegar. On the side also chop 1 green onion and divide it in half. Chop 4 cloves of garlic and prepare another 2 tablespoons of crystal sugar.

Seasoning the Beef

After the 40 minutes of cooking, take out the beef, discard the spice pouch, green onion and ginger. Leave the broth in the pot. In a separate skillet, heat 2 tablespoons of olive oil. Once heated, add 1/2 of the green onion and garlic. Stir until fragrant. Add sauce A and stir for 5 seconds on medium heat. Add the cooked beef and stir for another 30 seconds. After that is done add your sauce B along with your dried pepper, crystal sugar and peppercorn. Stir for 5 seconds. Lastly, add 2 large spoons of broth to the skillet, stir for 10 seconds.

Further Enhancing Flavor

Add the beef and other contents from the skillet back to the beef broth from earlier. Turn heat to low and cook for 90 minutes.

Preparing Noodle Sauce

Add 2 cloves of minced garlic, a few pieces of green onion, 1 tablespoon of soy sauce and 2 tablespoons for chili oil to the bowl you will be eating out of. You can add more chili oil if you prefer it to be spicier.

Cooking the Noodles

First wash 2 bulbs of baby bok choy into boiling water and cook for 2 minutes, then remove. In the same pot, add your noodles and cook them until soft. In the noodle sauce bowl, add noodle soup until your bowl is about 2/3 full. Remove your noodles and add them to your noodle bowl. Add your baby bok choy and beef to plate your dish! Enjoy! It is simply delicious.
