Boil Eggs

Put eggs in a pot, add enough water so that it covers the top of the eggs. You can also choose to add 1/2 tsp. of salt to the water, which will help with peeling off egg shells later.

Bring the water to boil, cook for 10 minutes.

*During this 10 minutes, we can prepare some other ingredients:
- Small chop 3 cloves of garlic
- Small chop jalapeno. I used half of green jalapeno and half of red one which is quite spicy. (Choose based on your spice level.)
- Small chop 1 green onion

Back to the boiling egg, transfer the hard boiled egg into cold water. Let it cool down a bit and peel the shell off.
Place on a sheet of paper towel to drain excess water.

Gently give the egg about 6 cuts around the surface.

Deep Fry Eggs

Using a wok, heat 1 tbsp. of vegetable oil on medium heat.

Add the eggs and cover the top to prevent oil from splashing around. Move around the pot to get the eggs to fry evenly.

Take eggs out when they're browned and wrinkled. It should need about 5 minutes.

Add Flavor

In the same wok, there should be some excess oil left over.

On low heat, add chopped garlic, jalapeno and green onion. Stir for few seconds until fragrant.

Put eggs back into the wok. Add 1 tbsp. of light soy sauce, 1/2 tbsp. of white granulated sugar.
Stir-fry for few seconds, let the sauce coat the eggs.

At last, I added just a little bit salt. You can have a bite before adding salt, too salty is not ideal.

Remove from the heat.
