Hand-Shredded Chicken

A very garlicky, spicy chicken.

Step 1

Cook the chicken thoroughly

Put all of the below ingredients into cold water and cook on high heat.

- 3 chicken thighs
- 1 green onion
- 2 star anise
- 3 bay leaves
- 1 cinnamon stick
- 1 tsp. of peppercorn
- 2 tbsp. of cooking wine. It can help remove the meat smell, ginger is a great substitute as well. (https://goo.gl/k1GZmQ)

When it begins to boil, skim the scum off and keep boiling on high heat for 20 mins.

Cool down the chicken

When the chicken is almost done, prepare a big container of iced water and put the cooked chicken into it to cool down faster.

Prepare mixture

When we're waiting for the chicken cool down, let's prepare the sauce mixture. Here are the ingredients, please follow the order to add from the bottom to the top of the bowl:

1. Half tsp. of peppercorn powder
2. 1 tsp. of Szechuan pepper powder
3. 1 tbsp. of sesame seed
4. 2 tbsp. of chopped garlic

P.S. I also chopped some green onions and cilantro for using later on.

Hand-Shredded Chicken

Pat the chicken dry and shred into thin strips.

Complete the sauce mixture

Heat up 3 tbsp. of canola oil. After about 1 minute and I can see some white smoke coming out.
Then Pour the oil right away to the bowl(step 3) when it’s still hot.

Next on the side, combine with
- 1 tbsp. of light soy sauce (https://goo.gl/Qa8n8z)
- 1 tsp. of mature vinegar (https://goo.gl/euZwCx)
- 1 tsp. of sugar
- 1/2 tsp. of salt

Toss the chicken

Pour the mixed sauce into chicken and toss them well.
(After taking a bite, I decided to add a little bit more soy sauce, salt and peppercorn powder.)

Lastly, add some chopped green onion and cilantro as garnish and mix them well.

Place your plate!

Although some parts of cooking process were annoying, it’s still worth it. The flavor is awesome, all the spices combine so well and the texture of the chicken thigh is so tender and moist. Plus, this is a cold dish so no need to worry about reheating the next day.
