"Trim" the Shrimp

(I attached a picture of all the ingredients I used.)

To “trim” the shrimp, cut the long whiskers and eyes off, as well as the sharp points on the head. Be careful while cleaning head-on shrimp as its head has sharp points. Make a slit over the shell, where the vein is seen. Shimp veins may have sand in there, which will affect the texture so remove the vein from it.

After washing them thoroughly under running water, put them in a colander or pat dry.
Let it sit aside and move on to the next step.

Chop greens and make sauce

Cut off the white bottom of the green onion, only keep the green top. Also, discard the bottom of the cilantro, only keeping the leaves. Chop them roughly.
Then cut a few pieces of ginger and put them aside for later.

For the sauce, I used a small bowl, combine with below ingredients:
- About 4 tbsp. of ketchup. You could add more if you prefer a more sour flavor.
- 1 tsp. of sugar
- 1/2 tsp. of salt
- 2 tbsp. of water
Make a smooth paste.

Stir-Fry Shrimp

Heat a wok over medium heat and add about 2-3 tbsp. of oil for frying. Add ginger into the oil and fry the shrimp until it turns golden brown on both sides, for about 3-4 minutes. Here I used chopsticks to flip the shirmp over instead of a spatula, because I want to move them as little as possible to prevent the heads from falling off.

Add the sauce and bring up the heat to high, stir fry to make every shrimp is coated for about 30 seconds to 1 minute. Turn down the heat to low, add majority of chopped green onion and cilantro, stir around for few seconds and remove from the heat.

Place the dish!

You can transfer to serve it immediately when it is still warm and sprinkle some of the remaining cilantro and green onion as garnish.
