Prepare the Ingredients

Before we start, prepare ingredients:

- 1 lbs of Pork Belly, cut into long, thin strips
- 2 tbsp. of Korean Red Chili Flakes (https://goo.gl/iFcVmp)
- 1 tbsp. of Minced Garlic, about 5 cloves
- 1 tbsp. of Minced Green Onion, about 1 green onion
- 1 tbsp. of White Sugar
- 1 tbsp. of Korean Hot Pepper Paste (Less spicy paste: https://goo.gl/83Muoh and More spicy paste: https://goo.gl/Wz2ABa)
- 1 cup of Kimchi (Similar one: https://goo.gl/ACJCfe)
- 1/2 of Yellow Onion, sliced
- 1 tbsp. of Light Soy Sauce (https://goo.gl/Qa8n8z)
- 1 tbsp. Green Onion, chopped
- 1 tbsp. White Sesame Seed

Pan-Fry Pork

Bring out a non-stick pan and heat it up on medium-high heat.

Place the pork belly in the pan in one layer, no need to add any oil. I cooked it for about a minute until the pork turns slightly golden brown. Then flip them over and cook for another minute. Although both sides of the pork are brown, they are not cooked thoroughly.

Use scissors to cut them into small pieces, which is pretty Korean style, keep frying until no more raw meat is visible and it’s best to get it a little crispy on the outside. To get the crispiness, fry a little longer. Once your satisfied, remove from heat and take the meat out.

Make the sauce

Use a clean pan, set it to low heat. Add a tbsp of oil. When the oil is hot, add minced garlic and green onions.

When it’s fragrant, add the korean hot pepper paste and stir for a few seconds. Then add light soy sauce, korean red chili flakes and sugar. Stir fry until everything is combined together.

Add more ingredients

Add kimchi and yellow onion. Stir until the yellow onion softens a little, add the pork belly.
Stir fry until the pork is coated with sauce evenly then add about a quarter cup of water.

Turn up the heat to high to let it simmer a while.
When the water is absorbed a little bit and it starts to get thick. Let's remove from heat.

Mix with Rice and Garnish

Scoop a big spoon of some pork, kimchi, onion and sauce, put on top of the steamed rice then mix them very well.

Lastly, sprinkle some green onions and sesame seed as garnish.
