Besides of all ingredients in the picture, I also have 2 cloves of garlic and 2 eggs.

Cook Rice

You can use sushi rice, but I only have regular white rice. Add 2/3 cup of rice and some water into the rice cooker.
Use finger to measure the water, it’s about 1 inch. I added a little bit more water than I normally do, because I want the rice to be nice and soft.

The rice can be used to make about 4 sushi rolls.

Cutting

While the rice is cooking, let's do:

1. Cut the carrot into shreds.
2. Cut half of a cucumber into long thin strips.
3. Cut pickled radish into long thin strips.
4. 2 cloves of garlic, peel off the skin.

Pan Fry

1. Beat 2 eggs thoroughly and add a little bit salt. Heat up the pan and keep it on medium heat. Add only about 1/2 tbsp. of olive oil, and use a paper towel to spread it around evenly. Pour in the eggs and let it sit for about 1 minute, do not move it until you see some bubbles appear on the surface. Flip it over quickly though, cook for about 1 minute then remove.

2. In the same pan, add 1/2 tbsp. of olive oil. Crush 1 clove of garlic and add it to the pan. When it’s fragrant, add spinach, some salt, and fry until soft.

3. Fry shred carrot until soft as well.

Cut Eggs and Kimchi

1. When the egg has cooled down. Roll it up. Then cut into thin pieces evenly.

2. Although I’m using sliced kimchi, I’d like to slice them a little bit smaller.

Season Rice

When the rice is done, use a spoon to loosen it up.

Add few pinches of salt, 1 tbsp. of sesame seed, 1 tbsp. of sesame oil and mix them together. You can have a taste, the rice should be a little bit salty, but not too salty.

Roll Up

Use a sushi roller, line it with a piece of plastic wrap and then place a sheet of dried seaweed on top.
Then add some rice to the top and use the spoon to press into a thin layer, but leave 1 inch of space at the end of the sheet.

Now let’s arrange our eggs, spinach, pickled radish, kimchi and cucumber like so. Lift the end of the mat, and gently roll it over, pressing gently. Roll it forward to make a complete roll.

Cut into pieces

Cut each roll into 6 to 7 pieces using a sharp knife.

If you think the ingredients I used are too heavy for you, you can choose to pick 2 to 3 ingredients or put whatever ingredients you would like, like avocado, or something else. The great thing is that you can be creative!
